Football time, Zoos and Boos

Fall means football! We've had a great time on the weekends going to Starkville to see Mississippi State play and once over to Oxford to watch Tennessee. We had a great time with mom and dad when they came to visit. Lots of YoungLife and WyldLife clubs... and Halloween!

Food: Dinner ideas, part 2

A few months ago I posted some dinner ideas. Here are some more from the past month of family dinners. Also, I've been making all of Alice's food. I just combine foods she loves (sweet potatoes, bananas, apples, pears) with other foods (green beans, snap peas, carrots, spinach). I have been trying one new food a week for her and different combinations. Rainer and I like a handful of vegetables that I rotate with our entrees. You might ask, 'where are the salads'? I eat a salad every day for lunch, so by dinner I'm ready for.... real food.   :)

Some dinner ideas:
 
Breaded chicken, mashed potatoes, gravy,
spinach and strawberries
(Breaded meats: brown in the skillet & finish in the oven)

Bacon cheeseburger sliders and broccoli
(With sliders you can change up toppings for each one)

Chicken pesto pasta and sweet corn
(Homemade pesto: basil, spinach, garlic,
olive oil, parmesan cheese, salt, pepper)

Chicken pot pie
(I pre-cook and season all veggies and chicken,
& make a pan gravy, before topping & baking)

Frozen California Pizza Kitchen
(added sautéed onions, spinach & mushrooms)

Chicken & shrimp burritos and bacon green beans
(pre-cook ingredients, roll-up & sear, top with queso)

BBQ chicken, skillet potatoes, asparagus,
sweet corn & garlic bread
(asparagus: toast with olive oil, s&p and roast
on 400 for 15 min)

Appetizer: Cheesy bread with tomato sauce dip
(tomatoes, half & half, seasonings, herbs, parmesan)

Ciabatta cheeseburger and baked fries
(ciabatta makes perfect sandwiches & cheesy bread)
 
Tortellini with chicken and broccoli
(frozen or fresh stuffed pasta is a quick & delicious meal)
 
Grilled chicken thighs, sweet potato fries
& squash au gratin
(toss potato strips in olive oil and bake at
425 until brown & crisp, then salt and season)

Beef strips with fettuccine
(sear the beef & make a gravy/sauce with drippings)
 
Curry/Jerk chicken, rice and pineapple
We love pineapple with spicy meals to cool off...
 
BBQ pork, fried okra, mashed potatoes, & broccoli
(pork butt low and slow, pull with a fork, mix in
sauce... our favorite BBQ sauce is Corkys)

Salmon, fries and peas
 
Lemon chicken and fettuccine with lemon sauce
(sauce: lemon juice, s&p, chicken broth, butter)

Salmon, mashed potatoes, fried okra
 I'm a little obsessed with fried okra right now...
(I like to cook fish in a really hot skillet with a
little bit of butter, olive oil and a sprinkle of salt)
